Health Committee - Recipe for cold winter months

 PEA AND CORIANDER SOUP

Ingredients

55g (2oz) Butter

140g (5oz) finely chopped onion

2 cloves chopped garlic

1 green chilli (deseeded) and finely chopped

450g (1.1lb) good quality frozen peas

900mls (1 ½ pints) chicken stock

2 tablespoons freshly chopped coriander

Salt & pepper

 

Method

  1. Melt butter and sweat onion, garlic and chilli for 3-4 minutes
  2. Add peas and cover with stock
  3. Bring to the boil and simmer for 7-78 minutes
  4. Add freshly chopped coriander and liquidize
  5. Season with salt and pepper and a pinch of sugar

Serve with a swirl of whipped cream and a few fresh coriander leaves
